The beans, which come from the beans of the chili plant, can be purchased at the farmers market.
Ingredients: 1/2 pound fresh, chopped garlic, peeled, and minced 1 large onion, diced 1 large red bell pepper, diced 4 cups chicken broth 1 tablespoon olive oil, plus more for frying 1 tablespoon cayenne pepper 1/4 teaspoon black pepper 2 tablespoons minced scallions (or 2 scallops) 1/3 cup cilantro, chopped 1/8 teaspoon ground cumin 1 tablespoon ground coriander 1/16 teaspoon chili powder 1/6 teaspoon salt 1/5 teaspoon black peppercorns, plus extra for garnish 1/12 teaspoon ground corona pepper Directions: Heat a large skillet over medium-high heat.
Add the garlic, onion, and peppers, and cook until soft and golden.
Add broth, pepper, corianden, cayanne, cumin, corona, chili powder, and salt.
Cook for 4 to 5 minutes.
Stir in the cilantro and scallons.
Add chicken broth, beans, and cilantro.
Bring to a boil, reduce heat, and simmer for 5 minutes, or until the beans are tender.
Remove from heat and set aside.
Meanwhile, heat a large pot over medium heat.
When the beans have softened and the broth is hot, add the oil.
Bring the mixture to a simmer, reduce the heat, cover, and reduce the temperature to medium-low.
Cook the mixture for 20 minutes, stirring frequently.
The sauce will thicken, but won’t take a lot of time.
Stir often to prevent burning, then remove from heat.
Season with additional salt and pepper, to taste.
Recipe Notes: If you prefer your chili a little more spicy, add a pinch of chili powder or cayonnaise to taste to the beans, before adding them to the sauce.
I like the taste of it on its own, but I think adding chili powder and cayonaise makes it even better.
You can also add chopped green onions, chopped cilantro or cilantro leaves to the chili if you like a little something extra.
This is a great chili for summer or the fall when it’s so hot you can’t even eat anything hot.
