Potato salad is a simple salad made with a potato, tomato, olive oil, and vinegar.
In this recipe, you can also add your favorite vegetables.
Ingredients 1/2 cup of fresh squeezed lemon juice 2 cloves garlic, minced 1 cup of chopped onion, minced 2 tablespoons chopped fresh basil, chopped 1/4 cup of extra virgin olive oil 1/3 cup of crushed red pepper flakes 1/8 cup of white wine vinegar 1 tablespoon of lemon juice salt and pepper to taste 1/6 cup of shredded parmesan cheese Directions Cut the lemon juice in half.
Heat the olive oil in a skillet and add the onion.
Cook for about 10 seconds, stirring frequently.
Add the garlic and cook for about 5 more seconds.
Add all the remaining ingredients, including the chopped basil, and cook over medium-low heat for 10 minutes.
Remove the skillet from the heat and transfer the salad to a plate.
Cover and refrigerate for at least 2 hours or overnight.
Notes You can also try this recipe with an extra-virgin olive oil.
